Newbie Crayfish

The best time is when the water is warm enough to wet-wade. "Purge" means to soak/rinse the bugs in a mix of salt and water. The goal is to get them to puke up all the gunk they've been eating. As with all shellfish (except shrimp), you want to keep them alive until the moment you drop them in the pot. This is because there is bacteria that live in/on shellfish that start to break it down as soon as it dies. Basic rule of thumb, if the bug it dead before you go to cook it, just chuck it in the trash before it hits the water. As for locations, you should be good-to-go in just about any stream in your area. You'll want to build at least one trap, and use that for scouting/prospecting. Another way to scout an area is to go fishing, catch something decent, and put it on a stringer. In really good areas, there will be a bunch of craws on the strung fish within 15 minutes.
