14' aluminum boat floor upgrade

I recently purchased a old 14ft sea nymph deep v boat. I would like to add a floor to it and remove the middle bench if that is possible. Any advice on how to do this and any disadvantages to doing so would be appreciated. I am concerned about the added weight and the stability the boat if in fact the middle seat can be removed. Any pics of anyone's revamped boated would be nice. Thanks! Ray
