Well this method was originally designed for smaller birds like Cornish game hens so it should work well.

Use game shears and cut on each side of the spine. Then look for a small bit of cartilage on the inside of the carcass up where the tip of the breast bone would be. It's where everything comes to a V. Make a 1/4" deep cut through that then open the breast up. The tip of the breast bone will poke through that little slit you made and the breast will lay flat. Tuck the wings and your all set
