I use the portable View attachment 246808 gas burner and the cast iron chicken frying pan on left. I cook in the garage. It is deeper than most skillets. Cast iron maintains a constant temp better than other metals. I use a oil thermometer to maintain a temp of 375 plus. Almost a smoke temp. I feel it gives the golden color and fast cooking we enjoy. Fast cooking keeps fish firm and less greasy. I stir and watch each batch without overloading the pan. Dip the first fish out and place on old mich outdoor news with paper towel.
