1st time trap set soon- looking for a couple pointers

Hi all. I'm looking to try my hand at trapping some crayfish this season. Once the night-temps get in the 60's, I'll usually go catfishing at night at least 1 night a weekend. I just have one trap to start, but if i'm successful, i'll for sure get more.

I usually launch the boat before sunset and fish till early a.m...i'd like to set my trap before I start fishing and retrieve it before heading back. The area is a small river delta where it feeds into a dammed up reservoir. Most of the bottom is silty/ stumpy, but there are a couple of spots where creeks feed into the river that have rocky bottoms. Which of these areas has the best potential to produce?

Also, for bait I was going to use catfish heads/ guts from previous catches. They are fresh frozen. After cleaning my catch, i'll put the waste in the garage beer fridge freezer-because my trash pick up is friday and catfish carcass' in the garbage can in the garage for a week is un-bearable. Will these make good bait, or am I better off with cheap hotdogs?
