Ive been experimenting with how i freeze fish and I have no conclusions yet. Abel im curious to hear why you dont rinse off fillets. I always rinse off any leftover blood and whatever else might of gotten onto the fillet. For any white fleshed fish i often soak in cold water for up to a few days before cooking with great results. I dont soak Salmon/trout for whatever reason.
