Cut a circle, thru the skin, around the base of the head and along the back. Grab the skin with pliers and pull it off like a sock. If you do this either outside or at a separate work station from where you are filleting, it cuts down on the amount of slime in your kitchen.
A couple years ago out fishing with a friend a burbot swung it's tail into my propane lantern and the slime sizzled and burnt onto the glass. The smell was intense. For the rest of the season I got whiffs of charred burb slime whenever I fired the lantern up.
